Hi, I’m Will—owner and roaster at Shed Coffee.
I’ve always loved making things and chasing down the best version of anything. So when a few friends introduced me to home coffee roasting, it didn’t take long for me to dive in. I started small—roasting 200g batches at a time, tinkering with every variable I could. Once I got some solid feedback (and a little encouragement) from those same friends, I leaned in and upgraded to an Aillio Bullet, bumping up to 2 lb batches and taking things to the next level.
Why Shed?

This isn’t about exclusivity or ego. It’s about bringing the beauty, flavor, and story of specialty coffee to people who’ve maybe never tasted it that way before. Whether you’ve been dialing in espresso shots for years, or you just want a good cup that doesn’t taste burnt—we’ve got you.
Most of what we roast hits the light and medium range, because that’s where the real magic happens. These roasts let the natural flavors of the origin come through—fruit, chocolate, florals, spice—all the stuff you didn’t know coffee could taste like. Every bean has a story, and we’re here to help it tell one.
At the end of the day, we’re here to illuminate the flavor and culture behind every cup—and share it with friends and family who didn’t know coffee could taste this good.
